Polenta & Black Beans

Prep time: 35 minutes

Cooking time: 30 minutes

Yields: 2 people

​Ingredients: 2 cups low sodium black beans
1 medium ear of corn (preferably grilled then cut off kernels-about 1 c)
1/2 of an avocado
1 medium peach ( ripe, but on the firm side)
1/3 c red onion
1/4 c cilantro


Directions: Mix together and then add dressing from quinoa party salad. Then grill polenta slices (any flavor) and put salad on top. I would save a little of the dressing to pour over the polenta. And Voila! You have dinner.

It makes about 4 cups and per 1/2 cup serving it's about 142 calories. Not too shabby. Hopefully you find this as delicious as we did.
